Herbed Goat Cheese SpreadGoat cheeses are usually not aged, so they are fresh and creamy with a milky, lightly salted flavor. To store, protect cheese from air with the original wrappings, plastic wrap or wax paper. Remove from refrigerator one hour before serving. All goat cheeses are heat sensitive and may become grainy and separate when overheated. Heat recipes with goat cheese just until melted. Goat cheese, when compared to cow’s milk cream cheese, is lower in fat, calories and cholesterol. It also provides more calcium, and goat cheeses are easier to digest because the fat cells are smaller.  Try this recipe.

5 Ounces Goat Cheese
2 Tablespoons Heavy Cream
1 Tablespoon Chopped Fresh Flat-Leaf Parsley
1 Teaspoon Chopped Fresh Thyme
1 Tablespoon Chopped Chives
Pinch of Coarse (Sea) Salt and Freshly Ground Black Pepper

Place all ingredients in the bowl of a small food processor; process until well combined. Serve on pieces of freshly toasted bread. Yield: about ½ cup.
