Mama’s Candied Apple Rings and Fresh Apple Cake

It’s almost fall, y’all! I am already seeing a different assortment of apple varieties at the local markets. And you would know it, the aroma of cooked apples followed me home and began searching through cookbooks for recipes with apples as a main ingredient. Bordelonville Volunteer Fire Department Cookbook has an excellent recipe for Mama’s Candied Apple Rings and Fresh Apple Cake. The Boredelonville church fair is set for September 17th and 18th, and will be held at the old Bordelonville High School complex, now the Bordelonville Fire Department Training/Community Center, located on Highway 451.

Mama’s Candied Apple Rings by Jimmy and Deedy Armand

6 Medium Apples
3/4 Cup Red Hot Candies
1 1/2 Cup Sugar
1 1/4 Cup Water

Core and cut apples into rings and set aside. Melt remaining ingredients in a large, shallow sauce pan. Add apple slices and cook on medium heat until the apples are transparent and the juice is like jelly, about 1 hour. Remove apple rings carefully and place on foil that was sprayed with non-stick spray. Allow to cool.

Fresh Apple Cake

4 Medium Cooking Apples
2 Cups Sugar
2 1/2 Cups Flour
2 Eggs
1 Cup Pecans
1 Cup Salad Oil
2 Teaspoons Cinnamon
2 Soda
1 Teaspoon Salt

Mix all dry ingredients. Add eggs, oil and sugars. Add pecans. Bake in tube pan for 1 hour and 15 minutes at 325 degrees.
