Langenstein Chicken


The Avoyelles Commission of Tourism Art and Cookbook Festival 2011cookbook will honor Dr. Carlos Smith, retired Avoyelles County Agent (and all-around good guy), who is so much a part of the life of the 4-H and County Agent’s Office, as well as Avoyelles Tourism (we share the same building). We hope to honor Carlos by compiling his favorite recipes through the years, including vintage recipes, 4-H recipes, County Agent Office favorite recipes, and many favorites of West Monroe, where Carlos was born and raised. We will have a special cookbook available during the Festival, in which any friend who wishes to write a note to Carlos may do so. He will be on hand during the Festival if you would like to talk to him and reminisce with him. Food samples will be given from each booth to encourage visitors to buy a cookbook. Try this recipe from Cooking with Carlos, for a simple, delicious dish.

3 Pounds, Boneless, Skinless Chicken
1 Bottle Russian Salad Dressing
1 (8 Ounce) Jar Pineapple Marmalade
1 (8 Ounce) Jar Apricot Marmalade
½ Cup Mayonnaise
 2 Packages Dry Onion Soup Mix

Spray a 9 x 13 inch Pyrex baking dish with cooking spray. Place chicken in dish in single layer. Mix all remaining ingredients and pour evenly over chicken. Cover and bake 1 hour at 350 degrees. Serve over rice with plenty of sauce.
