Going Bananas!

The holiday season is upon us and we are getting all wrapped up in shopping, baking and, of course, cooking.  Banana pudding is a delicious favorite of the holiday table, and can be ready quick and easy or slow and easy, only time factors are different.  I have searched for a couple of recipes that can take either time element route and both are delicious!

2 Small Boxes Instant Vanilla Pudding
5 large bananas
8oz. Sour Cream
3 cups cold milk
1 box vanilla wafers
1 medium bowl Cool Whip

Fold together pudding, sour cream, milk and Cool Whip; do not beat.  Layer vanilla wafers and bananas.  Pour pudding mix over layered wafers and bananas.  Sprinkle crumbled wafers on top for garnish.  Refrigerate then serve.

 

 

Mom’s Favorite Banana Pudding by Jackie Desselle

 

2 Cup Milk
6 Bananas
3/4 Cup Sugar
3 Eggs, Separated
2 Tablespoons Flour
1 Teaspoon Vanilla
1/4 Teaspoon Salt
Vanilla Wafers

Combine 1/2 cup of sugar, flour and salt in top of double boiler (or on very low heat).  Stir in milk.  Cook over boiling water, stirring constantly, until thickened.  Continue to cook uncovered, 15 minutes more, stirring occasionally.  Beat egg yolks; gradually stir into hot mixture (removed from heat).  Return to double boiler.  Cook an additional 5 minutes, stirring constantly.  Remove from heat; add vanilla.

Line bottom of a casserole with vanilla wafers; topped with a layer of sliced bananas.  Pour a portion of custard over the bananas.  Continue to layer wafers, bananas and custard, ending with custard as top layer.

Beat saved egg whites stiff, but not dry.  Gradually add remaining 1/4 cup of sugar and beat until mixture forms stiff peaks.  Pile on top of custard in casserole.  Bake in 425 degree oven for 5 minutes or until delicately browned.  Serve warm or chilled.
