The busy Christmas season, with all the many things to do, requires planning for quick, easy, tasty and nutritious meals.  Consider this idea for Baked French Toast for a make ahead breakfast for Christmas morning.  Serve along with sausage, fresh fruit and 3-minute eggs for a quick, delicious breakfast, which can be made the night before, needing only to be baked on a busy morning.

6 Large Eggs
1 French Baguette or Sliced French Loaf
1 ¼ Cups Milk
1 Cup Cream or Half & Half
½ Cup Sugar
¼ tsp Nutmeg
½ tsp Cinnamon
1 tsp Vanilla

Topping:
1 Cup Brown Sugar
2 tsp Corn Syrup
½ tsp Cinnamon
½ Cup Butter, softened
½ Cup Pecans, chopped

Cut bread into 1 inch cubes and place into a greased 9 x 13 in baking pan.  Mix eggs, milk, cream, sugar, vanilla, cinnamon and nutmeg.  Pour over bread slowly, getting some of the custard liquid on all of the bread.  Cover and refrigerate overnight.  In the morning, mix the butter, brown sugar, pecans and corn syrup.  “Dab” the topping mixture gently over the bread, covering evenly.  Bake at 350 degrees for 40 minutes, or until bread is firm, and topping is bubbly and brown.
