Ice Cream and Ice Box Sandwiches

Schools are out for the summer and June 21st, Father’s Day, is the first day of summer.  What better way to celebrate and beat the heat than homemade Ice Cream or Ice Box Sandwiches.  We have always thought of this as a long process, but I found a couple of recipes that for all intended purposes that don’t require much prep time, courtesy of Mrs. Ivan A. Miller, Mrs. David A. Yoder and Mrs. Marion Miller.

 

Ice Cream

 

5  Packages Instant Vanilla Pudding
1 1/2 Cups Sugar
3 Teaspoon Vanilla
1 Gallon Milk
2 Cups Whipping Cream

 

Mix and put in ice cream freezer.  How simple is that? Yields 2 gallons.  Freeze some for later!

 

 

Ice Box Sandwiches

 

1 Package Instant Vanilla Pudding
2 Cups Cold Milk
2 Cups Whipped Topping
1 Cup Mini Chocolate Chips
48 Graham Cracker Squares

 

Mix pudding and milk according to package directions and refrigerate until set.  Fold in whipped topping and chocolate chips.  Place 24 graham crackers on baking sheet.  Top each with about 3 tablespoons of filling.  Place another cracker on top.  Freeze for 1 hour or until firm.  Wrap individually in plastic wrap and freeze to use as needed.  Yeild 24 sandwiches.  Enjoy!
