Old-Fashioned Ice Box Cake

For a tasty, and nutritious treat of dessert for summer meals or snacks, consider this old fashioned Icebox Cake

Ingredients
2 (3 ½ Ounce) Boxes Pudding Mix (Regular or Instant)

1 (14 Ounce) Box Graham Crackers

Whipped Topping (If Desired)

Prepare pudding according to package directions, cover with plastic wrap and refrigerate for 45 minutes. In an 8×8 inch square baking dish, arrange a single layer of graham crackers. Cover with a ¼ inch thick layer of pudding. Continue layers to top to the dish, with pudding as the last layer. Refrigerate for at least 2 hours. Serve with whipped cream or topping, if desired. Note: Use vanilla pudding and add finely chopped, and well drained fresh fruits (peaches, strawberries, or blueberries, etc.) to the pudding.
